Heat @olive oil{3%tbsp} in a #saucepan{} over medium-low heat. Add @anchovy fillets{2}(they melt into the oil for savoriness, not a fishy taste) and cook, stirring often, until they begin to sizzle and melt, about ~{1%minute}.

Stir in @garlic{4%cloves}(minced) and cook until fragrant, about ~{1%minute}. Add @fresh oregano{2%tbsp}(chopped), reduce heat to low, and cook until wilted, about ~{2-3%minutes}.

Crush @whole peeled San Marzano tomatoes{28%oz}(1 can) by hand into a rough puree. Add to the pan with @red pepper flakes{1/4%tsp}(or to taste) and @dried oregano{1/4%tsp}. Bring to a simmer over medium heat.

Season with @sugar{1/2%tsp}, @salt{}, and @black pepper{} to taste. Reduce heat to low and simmer, stirring occasionally, until thickened and oil rises to the top, about ~{35-40%minutes}. Do not skim the oil.

Stir in a very small pinch of @baking soda{} until incorporated. Use on pizza, or cool and refrigerate.
